When Angel Food & Strawberries Meet

Last night I was in a baking mood, so I checked the pantry and found a box of angel food cake mix. Perfect! It's light and good for you! My second thought was "What to top it with?"

I grew up with a love/hate relationship with strawberry shortcake, however on this day I decided that the frozen strawberries that have lived in our freezer for the last month would meet it's mate.

After putting the cake in the oven I went to work finding a great strawberry icing recipe. What I found were lots of recipes that called for cream cheese... something I did not have. Then I found Nana's Strawberry Icing recipe. Three ingredients? Sounds good to me!!

So I whipped up 1 egg white, pureed the entire carton of frozen strawberries, and folded in 1 cup of powdered sugar. In the end I got this :(
It turned out less like icing, and more like sauce. So when serving ourselves the cake last night I used it as a garnish on the plate :)

And we found that the squirt bottle was the best holder of the strawberry sauce.
